Brunch Recipes with Mayonnaise
1. Pin wheel sandwiches: Flatten bread slices with a rolling pin. Spread burger mayonnaise on them. Then prepare a filling of grated carrots and cucumber. Spoon this on one end of the bread. Roll the bread and hold it tight. Refrigerate, cut the roll into thick slices and serve.
2. Potato salad: Chop boiled potatoes, onions, capsicum, bell peppers and some red cabbage. Add boiled sprouts if you want. Season with a dressing of mint mayo sauce and some olive oil. Serve chilled.
3. Macaroni salad: Everyone loves pasta so serve up this quick and easy macaroni salad. Boil and cool macaroni pasta. Finely chop bell peppers and carrot, half cherry tomatoes and mix them with boiled corn kernels. Mix the pasta and generous amounts of mayonnaise with seasoning. Serve cold.
4. Tomato tart: Line a tart plate with store-bought puff pastry so that the ends are slightly above the edges. Quarter tomatoes and deseed them and set aside. Sprinkle cheese on top of the puff pastry. Place the tomatoes on the cheese. Then, mix mayonnaise with basil and finely crushed garlic, pepper and salt. Layer over the tomatoes and sprinkle more cheese. Fold the pastry edges into the pan and bake at 230 degree Celsius for 20-25 minutes or until the pastry edges are puffed and golden and the cheese is bubbling.
5. Mushroom and olive bruschetta: Start off your brunch with this fun appetizer. Slice baguette rolls into medium thickness and toast them in an oven or on the pan. Saute mushrooms in some oil. Cool and mix mayonnaise and seasoning with some red chilli flakes with the mushroom. On the toasted bread, place the mushroom mixture, sprinkle cheese and olive slices. Bake till the cheese melts.
